1 Tbsp Brown Sugar
2 tsp butter
1/3 cup pecan halves
1 Tbsp oil (extra virgin olive oil is what I used)
5 tsp apple cider vinegar
pinch of salt
1 – 14.5 ounce can of sliced beets (drained)
or you can use fresh pan boiled, drained and cooled
1 medium Golden Delicious apple, cored and diced
1. melt butter and sugar in skillet; add pecans, cook and stir over low heat for 3-4 mins. until caramel colored; cool.
2 combine oil, vinegar and salt; whisk together and toss with beets and apple.
Add pecans just before serving and serve over bed of lettuce or spinach.
( For more protein, add crumbled Feta, goat or blue cheese)
