Fruit & Protein Salad


2-4 cups Baby Spinach & Mixed greens (kale/romaine/iceberg) or lettuce of your choice
2/3 cup strawberry halves
1/2 small apple
1 tablespoon of dried cranberries
6 natural Almonds
1 large boiled egg
1- 5 oz.can tuna fish in Spring water (drained)
2 tbsp. Lite Raspberry vinaigrette dressing (I use the Kraft brand)


1. Put egg to boil 1st and time when it comes to a boil, boil for 10 minutes.
2. Mix lettuce as desired in amounts desirable as bed of lettuce
3. Rinse and cut up desired amount of strawberries
4. Cut up 1/2 small apple into bite size chunks
5. Sprinkle top of salad with dried cranberries and almonds.- 6 almonds are 1.5 g protein/healthy fat
6. Drain, peel, rinse, & cut egg into 4 slices and add to sides of salad. (Tip: I usually boil 4 at this time so I have extra for others and/or another salad)- Lg. egg is 6 g protein
6. Add can of drained tuna fish if desired (for added protein- provides 22 grams)
7. Drizzle desired amount of salad dressing (healthier choice is no more than 2 tbsp.)
